Today I made a batch of brownies. This was my first time using zucchini in them and I have to say I love them. They are super easy, delicious and you can freeze them.
Here’s the recipe if you are keen to give them a go.
You will need:
Preheat oven to 180 degrees.
Line a brownie tin with baking paper.
Grate the zucchini into a large bowel. Roughly chop the dark chocolate and add to the bowl. Then add all of the other ingredients into the bowl and mix well.
Pour into the lined tin and pop into the over for 50 – 55 minutes or until skewer comes up clean.
Cool brownie in the tin and then cut into squares.
This recipe freezes well so separate into daily or weekly size portions and freeze. I use glad wrap and baking paper to wrap up 5 at a time to freeze.

Today I have a quick healthy challenge for you.
I challenge you to eat a piece of fruit.
Pretty easy right, then why don’t we eat fruit each and every day? I know I personally go through phases one week I’ll eat 1-3 pieces of fruit a day the next week I’m not even interested in it. I’m not sure why that is but when you remind yourself of the clear benefits of eating fruit each day its hard not to see that it’s GOOD for you.
Benefits of eating fruit:
- Fibre fibre fibre
- Filled with Vitamins and minerals
- Low in fat and calories
- May prevent many health problems including strokes
Do you even need any further reasons to complete today’s challenge or to try to add fruit to your daily diet?!

Today I challenge you to think positively.
Positive thinking is critical because your daily life is affected by the thoughts going on in your head. Things that you think often come out to play each day and if you are filled with negative thoughts there’s no way for you to embrace life and the beauty that surrounds us daily.
Benefits of Positive thinking:
- You are able to enjoy life
- You influence others for the better
- You become more wise
- You find and hold your inner peace
- You have more energy
- You will be more motivated
Ways to be positive:
- Practice gratitude; be thankful
- Encourage others
- Listen to music
- Smile (don’t forget it’s contagious)

- Set yourself goals and learn to adjust them as things change
- Be giving
- Plan your future
- Focus on the present
- Eat well (my personal favourite)

I hope you all had a beautiful weekend and are ready for the week ahead. Today’s challenge is a practical one. This stems from my constant need to be organised. When you are cluttered at home, in your car or at work you can’t focus or be efficient.
Today, I would like you to clear some space whether it’s your work desk, undie draw, cupboard or car.
We all have way too much “stuff” over the days, months and years we accumulate so many things. Some things are useful and beneficial to our lives and other just take up space and clutter our minds. Today’s challenge will encourage you to clean a space even if it’s only one, it may be something as simple as your desk at work or your pesky bedside draw. Set aside a little time to de-clutter this space. Throw out what you don’t want, need or use. Throw away anything that is out of date. Clear the crap, clean the area then reorganize the space.
Reasons to de-clutter:
- You will feel better. Having a tidy space allows you to relax and focus
- Less clutter means more space (providing you don’t buy new junk to replace the old junk)
- De-cluttering a space makes it easier to clean that space regularly
- Having a tidy, de-cluttered area makes you more proactive, you can find items easier and in turn save time
- Clutter gathers dust, get rid of it and breathe easier
- You might make some money, selling a quality item that you just never use
- Your second hand items, donated to charity will help people in need
Today I have decided to de-clutter my bathroom draws. Basically I haven’t done this in a couple months which is poor form for me. I usually do this every month. One of these draws is at the point where I can’t open it without having to push something down with my finger and I slide the draw out. That embarrasses me.

I already feel a million times better knowing these draws are tidy and organised.
So hop to it. Choose your space and de-clutter it!
Today’s challenge is a physical challenge. Sunday is looked at as a rest day for most people which is absolutely fine but today my challenge to you is to do 100 sit-ups.
100 sit-ups won’t take up much of your day and you’ll feel accomplished for getting them done. So set aside some time throughout the day to get these sit-ups done.
I find breaking my sit-ups into blocks of 20 helps me keep going. Take a short rest in between each block of 20. If you don’t do sit-ups very often you can break your sit-ups to blocks of 10 if you like. Just get the 100 done.
Sit-ups aren’t by any means a way to blast away fat but they are great for helping to strengthen your core and abs.
If you feel up to it, you can also add weight to your sit-ups. At the gym I usually grab a 4kg ball and do my sit-ups with this in my hands. It just adds a little more resistance to the action.

Today is the third day of my March Challenge and we are going to embrace today by completing today’s challenge, which is: Contact a close friend and spill your guts about two things you admire about them.
This may or may not be a challenge for you. Some people feel awkward spreading the love, but try not to. If you are a little shy or time poor feel free to contact your buddy via email, text or social media and let them know two reasons why you admire them.
By completing this challenge you will not only feel positive in yourself and feel like an amazing friend you will also motivate your friend to continue being the awesome person that they are. Everyone deserves encouragement, admiration and love.
So get out there! Spread the love! Spread the admiration! It will do the world wonders!
